Overview

LEM Fibrous Jumbo Sausage Casings in red are unprinted, non-edible casings designed for processing large-format meats such as summer sausage, salami, and jumbo or trail bologna. Each casing measures 7.5" x 24" with a 4.69" stuffed diameter, holding up to 6 pounds of meat per casing. The fibers are aligned lengthwise, allowing the casings to be stuffed tightly without bursting. Preparation requires soaking them in warm water for 20 to 30 minutes prior to use, after which they can be cooked in an oven at 170°–185°F or smoked until reaching an internal temperature of 165°F. Each package contains six casings.
